Weekly Menu: 1/17 - 1/22

I was actually good and made everything that I had planned for last week. We struggle with that a lot because we get busy and grab something out. My goal for the year is to cut way back on that because it adds up so fast. Here's what I have planned for this week:

Sunday Lunch - Zuppa Toscana Soup, Homemade French Bread

Sunday Dinner - PF Changs Mongolian Beef Copycat, Rice, Egg Drop Soup

Monday - Grilled Barbecue Chicken, Mashed Potatoes, Green Beans

Tuesday - Hot Dogs, Baked Beans, Chips

Wednesday - Chicken Spaghetti (trying another recipe from The Pioneer Woman Cooks), Salad, Bread

Thursday - Grilled Chicken Pesto Panini's, Pasta Salad

I will be looking for that PF Changs copycat recipe!

I also love the idea of menu planning, but I can just never get that organized!

Hey Lori! I have been dying for some sort of beef and brocoli recipe and can't get it at a restaurant here in the UK. Do you know of a good recipe for it? I haven't read your blog long enough to know, but do you post recipes for the main dishes in your weekly plan? I'd love to see the egg drop soup one too if you do! I couldn't bring my cookbooks with me here due to limited luggage space, so now I usually scour the internet for good recipes and your blog is one I'm going to first! Have a great week!

Hey Margaret! I do post the recipes for my main dishes if I haven't posted them before. I just get way behind sometimes. I plan on posting the egg drop soup recipe tonight after I make it. ( I didn't get to make it this week). The closest thing that I have made to beef and broccoli is chicken and broccoli. It's pretty good. I need to set up labels on the site so that you can just search for certain things, but once again I never have enough time!!
