The cupcake was really sweet and had a mild coconut flavor. Next time, I will probably add some coconut extract to the batter as well to make them a little stronger in flavor. The 7 minute frosting was a whole new experience for me. It was so light and fluffy and it actually reminded me of a less sticky version of marshmallow fluff. I would love this frosting piped into something. I couldn't get my hands on coconut flakes so I lightly toasted some shredded coconut.

Adding coconut extract to the batter is a good idea. THey definitely did not taste like coconut.
I had added more coconut to mine to really taste the coconut flavor. I agree; the coconut cupcakes were much more cupcake like!

We loved, loved, loved these cupcakes...best EVER! First time I made this frosting as well and it was so much fun watching the changes in it, etc. I will definitely make it again, and thanks for the idea of piping it INTO something...great idea! Your cupcakes look lovely and that photo shot is very nice.

I agree that the flavour was very mild. I wish I'd had some extract too.
Your frosting looks awesome. I agree that these were more cupcake-like. The last few were more like muffins in my opinion.
I think coconut extract would be a great addition. Your cupcakes are beautiful.
I liked the frosting too. I thought it would be perfect as a topping on smores cupcake. I might have to try that with a little torching. Great job!
I didn't have the coconut milk for the batter but had a concentrated "creamed" form in the pantry so i used that instead. The end result was just...like a dream of coconut. :) i would definitley add the extract if you have it on hand. any excuse for coconutty goodness
I like your idea to add coconut extract into the batter. These were my favorite cupcakes ever and I think they'd be wonderful with even more coconut flavor! I toasted some shredded coconut for the top too - great minds, I guess :)

these WERE great, weren't they? everyone I pawned them off on LOVED them :) I wanted to toast my coconut but i didn't remember that until AFTER i piled it on the frosting. oops. :)
