MSC November Challenge - Candied Sweet Potato Cupcakes

Well this month's MSC Cupcake Challange really snuck up on me. I have had so much going on that I lost track of time. I am so glad that I stuck with it and made this month's challenge though. Karen from Karen's Cookies, Cakes & More selected this months recipe. They are Candied Sweet Potato Cupcakes and they are amazing!

I was very curious to see how these were going to work out and if they were going to end up favoring a muffin in the end. This definitely is a light and fluffy cupcake and didn't favor a muffin at all...at least I didn't think so. I tend to underbake things by a couple of minutes to try to keep them moist and I think that helped in this case. These called for 28 minutes in the oven and I only kept them in there for 24 and they are perfect. My oven might be a little hot though...

The recipe calls for you to candy pecans and create a little marshmallow mountain that has been broiled on top to give it the effect of a sweet potato casserole. I chose to make some cream cheese frosting instead and sprinkled some roasted pecans on top. I would have candied the pecans if I had more time. I am happy that I went with the frosting. The cream cheese is amazing with the sweet potato.

My Mom does not like sweet potato at all typically and she loved these cupcakes. She said that they rank up with the best that I have made.

So many of us have opted for a different topping...and after tasting them in the end, i think these defo deserved a cream cheese or marscapone frosting. Good thinking in making the change!

I was thinking about making cream cheese icing instead - so I'm glad to hear it was a hit.

I, however, have a hard time deviating from instructions, and Martha said to broil some marshmallow mountains, so I did!

I agree - these were GREAT cupcakes - even without frosting! Moist and flavorful - a perfect fall dessert - glad you decided to mix it up - I did the same! Nicely done!

I loved the marshmallow topping on these cupcakes but I thought a cream cheese frosting would also be delicious! Glad you confirmed it for me :) Your cupcakes look awesome!

Your cupcakes look delicious. Great addition going with cream cheese frosting. The marshmallows tasted nice, but were gone before the cupcake. Glad you enjoyed!

Thanks for the comment - I think your cream cheese looks like a good, much simpler idea!

I really liked the toasted marshmallows and the candied pecans made the cupcake (in my opinion). They are kind of a lot of work in terms of watching the stove for it to boil, etc., but definitely worth it!

Good idea with the frosting, I bet it made them a bit more moist. The marshmallow mounds were a little taxing, you had to move fast and had to have a wet spatula or everything stuck. Thanks for baking with me, can't wait to see next months stuff

Those look really good. Not that you can go wrong with cream cheese frosting on any type of cupcake, but these seem like the perfect vessel for it.

I would agree these were delicious cupcakes (not muffins), cream cheese would be an excellent frosting. I will be making these again soon. Great blog--will visit often!
